Flax pudding
Reduces hot flashes and prevents estrogen dominance
- 6 tbsp of flax seeds (found in the bulk food section of your grocery store or at the health food store)
- 2 cups organic milk or soymilk or rice dream (500ml)
- 2 tbsp ground hazelnuts, almonds or pistachio nuts
- 1 large banana mashed
- 1 tbsp of honey optional
- Juice of one orange
- 1 apple peeled cored and grated.
Pulse the flaxseeds in a coffee grinder for a few seconds. Bring milk to a boil and stir in ground flaxseeds with a whisk to prevent lumps (add all of the ground flax seed at once) boil for 30 seconds remove from heat and pour into a bowl. Use a double boiler to prevent burning. Let cool. It will have the consistency of pudding. Mix banana, ground nuts, honey and orange juice into the flax pudding mixture. Gently mix in grated apple and spoon into parfait dishes layered alternately with fresh fruit and real whipped cream. Top with a strawberry and a dab of whipped cream. It tastes so good your family won't believe it is healthy. I eat it for breakfast.
